For a tasty meal for 4 to 6 people, you will need:

  • 1 whole free-range chicken, around 1.5 kg
  • 1 tablespoon olive oil

  • 1 yellow onion
  • 3 cloves of garlic
  • A bunch of fresh herbs (rosemary, thyme)
  • 500g seasonal vegetables for roasting (beans, carrots, potatoes, zucchini)

  1. Start by preheating your oven to 200°C.

  2. Rinse the chicken under cold water and pat dry with paper towel.

  3. Rub the chicken with a drizzle of olive oil and season generously with our Le Curry Noir Flavored Camargue Salt. Be sure to season inside and out for a flavorful chicken.

  4. Cut the lemon into quarters and the onion in half. Place them inside the chicken with the garlic cloves and fresh herbs. These ingredients will give a delicious cooking juice.

  5. Place the chicken in a baking dish. Add the vegetables around the chicken, drizzle them with a little olive oil and sprinkle them lightly with Le Curry Noir Flavored Camargue Salt. Cook for a specific cooking time to obtain grilled chicken with crispy skin.

  6. Chicken cooking time is approximately 1 hour and 20 minutes. Remember to baste it regularly throughout the cooking process. If necessary you can add a small glass of water in the bottom of the dish. At the end of cooking, take the chicken out of the oven when its skin is golden brown and crisp and the juices run clear when you prick the thickest part of the thigh with a knife.

  7. Once your chicken is cooked, let it rest for another 10 minutes under a sheet of aluminum foil before carving it. Serve the grilled chicken with the roasted vegetables and enjoy!
