Summer is fast approaching, bringing with it the sweet scent of Mediterranean flavors. And what better way to celebrate this season than with a classic and delicious Provençal dish, Tomatoes à la Provençale? But beware, not just any old how: we offer you a version enhanced by Sel aux Herbes de Provence from the Atelier du Sel Camargue. A natural and authentic delight to awaken your taste buds.

Ingredients

For 3 to 4 people.

  • 8 beautiful tomatoes
  • 3 cloves of garlic
  • 4 tablespoons breadcrumbs (or chopped bread crumbs)
  • Olive oil
  • Camargue Salt Mill with Herbes de Provence Atelier du Sel Camargue
  • 1 cup chopped parsley
  • Pepper

Cooking time

35 minutes in the oven at 200°C.

Preparation

  1. Start by washing and drying the tomatoes thoroughly. Cut them in half, salt them lightly and place them in a colander for about 30 minutes to allow them to drain.
  2. Meanwhile, prepare the filling: chop the garlic, the parsley, add a tablespoon of olive oil and the breadcrumbs then mix well.
  3. Take a large skillet. Heat a little oil, place the tomatoes face down on the pan and sear them for 2 minutes over high heat.
  4. Arrange the tomatoes on a baking sheet, spread 1 to 2 spoonfuls of garnish on each half-tomato then finish seasoning with a turn of the Camargue salt mill with Herbes de Provence Atelier du Sel Camargue and pepper.
  5. Lightly drizzle with olive oil and bake at 200°C. Let cook for about 35 minutes. The tomatoes should be cooked, tender and the topping golden.
